In the INCA DISTILLERY we work passionately for each of our products. Our process is a compendium of wisdom, perfectionism, passion for details and advanced technology.
As one of the principles of THE INCA DISTILLERY is to add new and inspiring things to the Peruvian culture and Mixology, we do not keep anything dark. We like to share with the world our knowledge and how to develop high quality distillates.
THE INCA DISTILLERY is in fact a venue with open doors for anyone interested in our work. Transparency and elucidation are of utmost importance to us.
sugar cane spirit
The first step of the distillation of GINCA is the maceration. Therefore, we use the highest quality and purest sugar cane spirit from Trujillo. That allows us to extract the finest essential oils of our botanicals confering aroma, taste and body to our gin.
Using the most advanced technology to distill and the purest spirit to extract the essencial oils of our Botanicals result in the best gin´s with intense and finest aromas. Without COPPER this would not be possible.
During the macerartion for 24 hours in purest sugar cane spirit, the interaction between molecules of the alcohol and the essential oils of the peels and herbs, results in a transfer of taste and aroma from the plants to the basis of our gin, the sugar cane spirit.
All botanicals we use are fresh and natural. They are washed, prepared and peeled by hand in the moment they enter the door of our distillery. We do not use flavourings or sweeteners. This is the only way to obtain a spirit that can be called "ultra premium"..
Part of the botanicals such as molle, rosemary, huacatay, pepper, verbena and rue are distilled inside a steel basked that do no touch any hot liquid but we extract its essential oils by infusion with the steam during the distillation, avoiding smoked aromas.
To give our spirits the right alcoholic strength, we only use pure Andean water, demineralised and chemically pure to keep intact all the original aromas and flavors that we obtain through distillation.
